Slow Cooker Chili


The weather here in Kentucky has been awfully strange lately. Today, the snow is coming down while last week we were near 70 degrees.  Chili has to be one of those meals that warms you from the inside out. Full of protein and fiber, it's also a great choice for someone following Weight Watchers like myself.  I indulged myself with this low point meal and relaxed while watching the snow fall.  It's a good thing it feeds a crowd too since my in-laws are in town.

Ingredients:
1 pound lean ground beef (I used hormone free)
1 can pinto beans, drained
1 can northern beans, drained
1 can dark kidney beans, drained
1 can dark kidney beans, undrained
1 packet chili seasoning
1 large can crushed tomatoes
1 can tomato sauce
1/2 cup diced onion
1/2 cup diced green peppers
2 cloves crushed garlic

In a large skillet, cook the ground beef, onion, green peppers and garlic until the meat is browned.  Put in a crock pot with the beans, tomatoes, tomato sauce, chili seasoning.  Cook on low for 6-8 hours.  Serve with grated cheese, sour cream, green onions or crackers. Enjoy

A one cup serving of this chili without toppings is 6 points plus. I topped mine with a little cheese and light sour cream for an extra two points!
