Banana Nut Muffins

Can you tell we love muffins around here?  Since Adam is leaving tomorrow for his trip, and he has a long car ride, I decided to make him his favorite muffins.  When we first scored our Kitchen Aid off of a sales page for sixty bucks we had no clue what to make in it.  After asking a few friends, we got the suggestion of banana bread.  I didn't have a loaf pan at the time so that's how this muffin came to be.  It's moist, dense, with crunchy edges and not too sweet.  We use 100% whole wheat flour and find that it really compliments the nutty taste in these muffins.

Ingredients:
3 bananas mashed
1/3 cup softened butter
3/4 cup sugar
1 egg
tsp vanilla
tsp baking soda
1/2 tsp salt
1 1/2 cups whole wheat flour
1/2 cup walnuts

Mix together the mashed bananas and softened butter. Add in the sugar, 1 egg, vanilla, salt and baking soda and combine well.  Add the flour 1/2 cup at a time.  Fold in the walnuts and put 1/4 cup scoops into a prepared muffin pan.

Bake at 350 for 25 minutes or until the tops are firm.  Let them cool in the pan before eating.  Store in an airtight container at room temperature. Enjoy!


These are 6 Weight Watchers points plus a piece when using whole wheat flour.
